Breakfast for Super Heroes

A few people I speak to, baulk at my breakfast choices, but I don’t care. I like what I have. It’s evolved from plain old scrambled eggs on toast, and is full of nutrition and balance and keeps me full til about 2pm!!

One person did suggest the other day that he thought it sounded nice, but I have a feeling he was just bring polite. 😉

Anyway, I like it, so here it is.

Start off with a salad tomato, sliced up.

Then crumble an oatcake (or 2 if I’ve worked out / run long).

Two dollops of low fat cottage cheese.

Two-three slices of smoked salmon.

Then scramble two eggs, for a minute (with milk and butter), stir. Then add a handful of blueberries, and cook for another 50 secs – 1 min.

Serve. (With coffee and water).

Yum!!
