This weeks food prep

Some of you might know that I like to prepare my food to take with me up work. Salads are simple, easy and very tasty. I tend to make them the night before the start of the week, using Tupperware to store them once I’ve made them, then I add a sliced hard boiled egg the day I’m going to eat it.

I’m working 3 days this week, so I only made 3 portions, plus some fruit for tomorrow.

Here’s what’s in the salads:

Cucumber (6 slices, quartered)
2 small tomatoes
4 grapes halved
Small handful of yellow pepper (diced)
Cathedral city cheese (cubed)

I think I’ll add caesar salad dressing to them this week. 🙂

Each morning it’ll just be a case of making up my bagel (and cottage cheese) and adding the egg to my salad.

I’ll be exercising each morning this week so it’s good to have everything ready to go. 🙂
