It’s Monday night again and here’s this weeks soup I’m making for dinner tonight:
Tomato, basil and sweet potato.
2 spring onions sautéed in butter for 2 mins.
Add 1 litre of veg stock (2 cubes)
Set to boil for 5 mins
Add 390g carton of chopped tomatoes
Add 300g of chopped up sweet potato
Add about 15 cherry tomatoes
After 5 mins, set to simmer for 15 mins.
Add chopped up basil and season.

Just what I need to recover from an hour of Bodypump and 20 mins of weights. 🙂 plus a wee protein shake too. And I had two slices of wholemeal bread with peanut butter on it too. Yum
It makes 4 large servings.
