I made some tasty tomato basil and chilli soup tonight. 30 mins prep n cooking time. 🙂
1. 4 spring onions chopped.
2. Simmer onions for two mins in with a lump of marg.
3. Add I litre of veg stock (2 stock cubes)
4. Set to simmer for 20 mins.
5. Stir and simmer for 3 mins, then ad 3 tomatoes quartered, 390g carton of tomatoes with chilli. 6. Add chopped 30g basil and seasoning.
7. Cook and stir for remaining time.
Serve with bread.
Serves 4 (or 3 greedy / hungry people 😉 )
