I made some muffins the other night. The recipe was in this months Runners World magazine and the main fruit ingredient is a Pink Lady apple (my favourite!). So I decided to make them.
Runners world call them ‘fat fighting muffins’ as they apparently have less fat than normal shop/cafe bought muffins (still 20g). 🙂
12 muffins: apple, orange zest and juice, oat bran (which I couldn’t find easily so I added crushed Shreddies instead lol). Then there was a crumbly topping of oats, butter, flour and sugar. Yum.
I’ll put the full recipe on here later. They were damn tasty, but I gave most if them away so I didn’t eat them ALL!!
